Mono- DiGlycerides are a commonly used emulsifier and are based on vegetable oil. Mono-DiGlycerides are used in ice cream, margarine, sauces, bakery products and any application where an emulsifier will help to disperse oil in water or water in oil.
The ingredient is available as a fine beaded powder and will sparingly disperse in water. However it needs to be heated to around 65°C to become fully effective.
